Homemade Tomato Sauce from our organic garden

I love summer and the amazing vegetables that come out of my organic garden. It’s not huge, but it provides my family with tomatoes, basil, strawberries, scallions, chives and peppers for four or so months during the summer.

Being 1/4 Italian, I love to make homemade sauce. Today I tool a bunch of Roma tomatoes from
the garden, cut them in half, added garlic, basil, oregano, salt and pepper and roasted them in the oven until I cooked off most of their water. Then I put them in a pot and puréed them with the immersion blender. This created an amazing sauce which I divided up into smaller containers and froze for use this winter. Gardening takes a small amount of time to tend to, but offers a huge payback in terms of flavor.
