Pineapple Upside Cake – A Slice of Nostalgia for your Meal

A few years ago it was deviled eggs that made a comeback (yum) and now it seems that pineapple upside down cakes are coming back into fashion. When I was a kid, my mother used to make them for desert after Sunday dinner. They were always moist and delicious.

At no less than three restaurants in the last week I have been offered pineapple upside down cake as an option.

Recently, a quiet afternoon at home gave me an opportunity to break out my mother’s recipe and bake one of my own.

The recipe was simple, make a mixture of butter and sugar In a pan. Place pineapple on top of that and then the batter on top of the pineapple.

The cake was moist and comforting. The pineapple went well with the cake and the cherries gave it a bit of sweetness that complemented the pineapple.

So the next time you have an opportunity to bake something, try a Pineapple upside down cake. It might bring some nostalgia to your meal.
